My Pumpkin Pancakes

So... I was going to make Jaime Eason's Pumpkin Spice Pancakes recipe that I found on Bodybuilding.com but I realized I didn't have any oat flour (or baking powder). so I used regular flour instead. I also used butter when I should of just added more milk to the recipe (I didn't think of this until after I already made the batter).

I thought to myself how different could the nutritional value really change??

My pancake recipe:

1 1/4 cups of King Arthur all purpose flour

1 1/2 teaspoons of Truvia Baking Blend

1/2 tsp. baking soda

1 tsp vinegar

1/2 tsp salt

1/2 tsp cinnamon

1/8 tsp nutmeg

1/4 tsp allspice

1 cup organic skim milk (Nature's Place)

6 tablespoons pumpkin puree (Nature's Place)

1 large egg

2 tablespoons organic butter (Nature's Place)

(made 9 pancakes)

Nutritional information (1 pancake):

111.55 calories

16.22 g. carbs

3.22 g. fat

3.88 g. protein

3.22 g. sugar

1.11 g. fiber

Well... here is the comparison of regular pumpkin pancakes to Jaime Eason Pumpkin Spice Pancakes:

47.55 more calories

2.22 more g. of fat

6.22 more g. of carbs

0.12 less g. of protein

The major difference between the two recipes is the amount of calories (if comparing 1 pancake to 1 pancake). Jaime Eason's recipe does not state what the "serving size" is. With the butter it added a significant amount of additional calories than Jaime Eason's pancake recipe. The difference in the amount of protein was negligible so if you really want "protein pancakes" you would need to add in protein powder which is stated in the Jaime Eason recipe. I am pregnant right now so the extra calories, fat, and carbs isn't the end of the world and especially since on the weekends I usually only eat 3 meals during the day and no snacks (I just usually busy). As you can see I ate 2!

I have included the Jaime Eason recipe below if you want to try them. I know I will be making the protein version once I start trying to lose the baby weight!
